Chinese because Taiwan is a part of China and modern Taiwanese food includes most Japanese foods so you can get two for the choice of one. And traditional Japanese food is basically the same as food on the Eastern coast of China.

As a bonus Northeastern Chinese food is very similar to Korean foods, and you can get kebabs and pilaus and naans in the Nortwest.

Japanese cooking is kinda boring in the sense that it does very few things with the ingredients, but they do it extremely well and is usually pretty tasty.

Chinese cooking is authentic as it gets; most of the time its peasant food that's really great, you get generous portions, and is fairly cheap. Some of the best Chinese food will never be on any yelp review or rarely on any youtube channels. seasoned chinese food eatery "experts" will tell you to disregard all the yelp guides and just go walk around and see where all the old chinese aunties/uncles/grandmas/grandpas eat, because they know their shit and will definitely not disappoint you. When you're traveling in China there is of course always the risk of gutter oil and low quality shit, so long as you follow the crowd and make intelligent decisions you won't be eating human feces or disgusting "mystery" meats.

Japanese might be the most overrated cuisine in the world. It's not that their food is bad but come on. Ramen is just noodle and chicken broth the equivalent of which you can find in any place on earth. Vegetable portions are tiny and fresh fruit is extremely expensive even in summer. Quite a lot of stuff is fried and/or drained in mayonnaise like okonomiyaki. Their sweets are dog food tier garbage (this applies to indian and far-eastern food in general). If you want to try their western food, their 'bread' is abysmal for european standards and even far worse than america's pseudo cake bread. Oh, and they do not have ovens.

They have some nice flavours like miso, fermented beans or wasabi. I really like their pickled roots and stuff. Overall, I would say that Japanese breakfast is unironically great.
