Should you stack the pancakes after being made or spread them as much as possible ?
Stacking preserves heat but presses them down so you don't get the puffiness.

I put them on a cooling rack so they don't stick together or get soggy layers in between each other. Helps if you have leftovers to refrigerate too by not letting them stick together.

god I love crepes, there's a cafe near me that makes em 100 different ways (not really 100 but many many different toppings/fillings) and I've tried em all but to this day my favorite is still butter and sugar. Fresh crepe nice and warm with butter and sugar. It's one of those perfect simple things, pure joie de vivre.
