I made both his baked beans recipes and tried a few of the preserving techniques he's shown. All of it turned out well.
I've talked to him IRL and he's a pretty nice guy. If y'all are interested he goes to all sorts of reenactments in the Eastern USA, normally has a booth set up at Feast of the Hunter's Moon.

In general, there's a reason we stopped cooking things the way they did 300 years ago. You can try his recipes but most of the time they'll just come out kind of "Eh, alright?". Outside of recipes which emphasize "forgotten" spices, it's not all that unfamiliar and they're good starting points for learning modern variations. I like how he encourages people to try making puddings and meat pies though.

It's a great channel and anyone who wants some practical knowledge of cooking with an open flame/ coals ought to watch it.
