Cast Iron Pans are a fucking scam, I can't believe I wasted 30 bucks down the drain on this garbage when it could have towards a stainless steel saute pan which is superior in everyway. It doesn't weight like a tumblr landwhale, you can actually clean it without spending 20 minutes, and doesn't require seasoning. You can actually leave food in it overnight without worrying about acidity.

Stainless or more specifically Tri-Ply with an aluminum core, is actually better for searing meat. The idea that cast iron is better is an absolute joke. Cast iron is a weak conductor of heat and as such will have hot and cold spots.

Stainless with an aluminium core however is an extremely good conductor due to the core. Heats up extremely fast and gives a consistent

I assume you mean carbon steel, not "chromed steel". We're talking about pans, not Harley Davidsons. They are different tools for different jobs. Carbon steel is fairly light. They are used for saute pans in busy kitchens because they are durable. Cast iron's greater weight makes it not as useful for saute, which is why you don't see it used as much in pro kitchens.

You're misunderstanding what thermal mass and thermal conductivity are. Temperature is a function of absorbed energy and heat capacity for its size. It's why air at 600 degrees doesn't do much to you, but 200-degree water causes sever damage and hurts like hell.

Materials with high thermal conductivity can absorb a lot of energy quickly. Materials with high thermal mass can store a lot per unit mass. High thermal conductivity improves heating characteristics, hence the prevalence of multi-ply pans. However, cast iron can hold far more energy per unit mass, which is part of why it does such a good job searing, and the layer of polymerized oil built on the surface is an extremely slippery surface that food does not stick to easily. I fry eggs and salmon in mine frequently. If your food is sticking you need to re-evaluate things.
