Poorly cut scallions really trigger me for some reason (probably because knife plebs who go on about, "hurr my $15 workhorse can do anything your $100 nip steel that you hone before every use and occasionally sharpen can do), but now I really want to make some musubi and deep fry it at work; that looks really good (other than the scallions - and only because of how lazy they are compared to everything else). I feel stupid even asking, but how would you even go fry it like that? It's obviously just panko on the outside, but is the binder just egg? I literally work next door to a sushi place and have a cigarette with the main sushi chef almost every day, so should probably ask him, but that might be kind of weird.
