the only part of the chicken used to make the stock was the bones and carcass. Three onions, six medium sized carrots, and a thing of celery doesn't cost much more than five bucks. For a gallon of stock, it's pretty economical. Plus I think it tastes better than stock cubes or boxed stock.

I added bay leaves in later. Potatoes make the soup a bit more filling, and the mexican crema is more like creme fraiche than sour cream.
didn't have any allspice though. for some reason that stuff tastes very christmas-y to me so i tend not to buy / use it.

When I make chikn soup I add a whole brown onion and let that fucker turn into mush releasing the flavor. Add some garlic and the same let it turn to mush and mix it around the broth. Shit is so good. Add some celery, carrots, cabbage and a whole tomato(super important), then the chicken next add some salt and some pepper. Serve with a lemon wedge and more chopped onion and cilantro. Shit is so fucking good when I have the flu.
