There were some bits of rib in there. Removed them and saved them for stock.
Put some garlic, ginger, salt and pepper, rawit chilies, and the sliced top of the fennel in there. Trussed it up.

Actually, I used a little limepeel as well. Forgot to mention that.
Anyway. Browned pork goes on top and into the oven. Covered on fairly low heat for about an hour and a half and then the last half-hour uncovered with slightly higher heat to maintain some crunch on the crackling.

Frenchsliced a few onions and the fennel and tossed them in a little oil and a lot of heat.
Added a few chopped rawit chilies later.

It came out very nice. If you find that the rind isn't crispy enough you can fix it with a few minutes under the broiler at the end of the process. I didn't have to this time.

Thanks. It's half a coconutshell that I polished a bit with some sandpaper.

The rice and beans have salt and turmeric. The onions and fennel, apart from being flavourful themselves, have salt, pepper, garlic, and ginger. The pork has salt, pepper, garlic, ginger, chili, limepeel, thyme, and fennel.
I'll gladly take your advice on what you would have done differently.

Can't say I've noticed that on my board. It's not bamboo and I really don't feel that it grips the knife.
I don't know the exact kind of wood it's made from but it feels fairly hard. I'd have to really put some effort in to get my knife to make a proper dent in it.
