How to cook liver?
I always get that iron and soil flavor and nobody likes that.

The best way. None of this soak in milk nonsense. Butter into pan, fry onions, remove onions, lightly dust both sides of liver, heat in same pan as onions were in until cooked through.

The last time I had liver, it was chicken livers. I patted 'em dry, did egg, flour, repeat, and then fried the shit out of them in oil. Most people seem to care more about the texture than the taste, and I've had better reactions when I "overcook" the liver to the point it really firms up and is totally grey.

Eat it RAW. That way soluble vitamins and heat-sensitive enzymes won't disappear.
You made the right choice of choosing liver, buy a large slice of cow/ lamb liver and cut it down so you can eat it raw. Don't even wash that thing, just grab the little pieces you cut and put them into your mouth.

The funny thing is the liver I buy in the store has that irony flavor and mushy texture, but when I cook and eat a deer liver the day of the kill it's firm and almost sweet flavored. It's an issue of how old it is that makes it shit.

personally i looooooove the taste of liver, even low quality frozen stuff, but maybe it's an acquired taste... i've heard that soaking it in water or even better milk prior to cooking makes the taste much milder.
