I've been to a fairly authentic Chinese restaurant in California before and they have a lot more to offer than just what a typical stuff you get at regular American Chinese fast-food. They still had lots of those well known dishes there, but seeing other people's meals while walking through the restaurant, they seemed way more authentic and let fast food like. Yup those are just your standard lo-mein take out noodles, and yeah like I said I've had similar difficulty nailing the same taste you get from a restaurant for some dishes. Might be the ingredients they use could be cooking equipment like for stir fry they have industrial watts with way higher BTU flame than you can ever get in your kitchen at home to cook the food in a flash.

I assume you bought some prepackaged noodles, what kind? What tasted different to you, the noodles or the sauce? MSG is the secret ingredient in a lot of US chinese too.

i bought prepackaged noodles, first some that just said quick cooking noodles and then some that said lo mein noodles. Theyre both fine but i dont get the consistency and texture of the takeout noodles and i cant compare the noodles themselves without the sauce because takeout is always with sauce on it already. But yea it might be related to the equipment. My sauce also makes the noodles a lot darker. I use all purpose soy sauce, dark soy sauce, oyster sauce and chinese wine mostly but as i said it doesnt taste bad, just like something completely different. Im in Europa so i dont know about msg, but it could be possible they put some enhancer in there.

Here's my goto order
>General Tsos chicken
>Fried Wontons dipped in garlic sauce
>Fried Wontons with sweet and sour sauce
>Beef Lo Mein or Mushu Pork or Chicken Chow Mein
Plus my free egg roll, usually lasts me 3-4 days if that's all I eat.

Hwen I feel like getting something different

Sometimes I'll deviate and get Orange Chicken, Lemon Chicken, Sweet and Sour or Sesame chicken instead of General Tsos. If the restaurant is real based, I'll get Pork Buns too, but usually they don't have em. The Chinese place I grew up on still remembers me and always welcomes me, Chinese know business well. Bug people, but they're good bug people sometimes.
I've also never had good Chinese food outside of NYC.

In NYC it's hard to find. I only knew 2 restaurants out of over a dozen that had it. Some restaurants will also have Szechuan wontons which is a steamed wonton in garlic sauce. Another restaurant I went to had garlic sauce version of General Tsos that beat the sweeter flavor that was pretty much every where else. Same goes for the rarity of the pork buns.

I'm from NYC too but have never seen that, and I used to go to Chinatown in Manhattan on Saturday or Sunday and just go to random dimsum places with my girlfriend. I don't do that so much anymore since it's not as much fun alone. The trick to finding good ones is go to the ones filled with Chinese folk, those will be the best. You get those trolly girls bringing stuff out with the bingo cards to mark the orders.

Usually just make my own:

HONEY GARLIC PORK

pork chop or shoulder steak, sliced thin

wheat flour, cornstarch or potato starch

minced garlic

grated fresh ginger

water or stock

soy sauce

Chinese rice wine

honey

toasted sesame seeds

Season pork with salt and pepper, dredge in flour or starch. Fry in a small pan until golden and crispy. Remove pork from pan and discard most of the oil. In the still-hot pan, add garlic and ginger and stir until fragrant. Add water or stock, soy sauce, and honey and cook for a few minutes. Mix cornstarch and water in a small bowl and add to the pan along with the reserved pork. Sprinkle with sesame seeds and serve over rice.
