well this isn't a sake thread but here's some basic guidelines:

all sake bottles fall into two classified sets : alcohol source and level of rice milling

a sake classified as "junmai" is sake that only contains rice alcohol from the brewing process, while non-junmai (honjozo) might have alcohol added from another source.

the second term refers to how much the average rice grain has been shaved away in the milling process. the more you shave off, the cleaner and smoother the sake. to be referred to as gingo, at least 40% of the grain should be milled away. to fall into the daigingo category, at least 60% must be milled out.

both classes are independent, but typically high-end sake such as Dassai 23 (the 23 means the rice was milled down to an insane 23% of it's original size) goes for quite the premium.

A mod decided to have a laugh and start arguing with them, they ganged up on him and made him feel bad, so he went on a rampage deleting all mention of alcohol for several weeks. The board turned into constant bitching about the mods during that time so they backed off and started allowing a little discussion of beer and beer only since it was the most popular subject, while posting propaganda threads that anyone who has a glass of wine with dinner is a fuckup who beats his wife and can't hold down a job.

Eventually things returned to mostly normal except the full time "I am an alcoholic let's discuss my personal problems" threads are still not allowed, but for the most part alcoholic beverages may be mentioned (except wine which the mod seems to still be angry about for some reason)

I find that around 3-5 prominent notes is reasonable, but any whiskey reviewer worth their salt will focus more on the overall journey/experience that the whisky shows you. In other words, it's not about the number of notes but how they communicate how these elements come together. For example, I watched one guy on youtube rattle 10-15 notes for fucking Famous Grouse.

they're trying to artfully describe shit that generally corresponds to a few basic, universal things. Sweet, fruity ester tastes. Spice from the grain. Vanilla or allspice-like phenolic spice from the wood. More phenolic stuff from the wood or peat, if applicable. Alcohol burn. If it isn't the good stuff, it tastes less rich and the alcohol burn isn't covered as artfully. Also it tastes kind of sharp or astringent in a way that doesn't gel with the rest of the palate. I have found that these things seem to be universal.

If that was every review then no one would be a professional whiskey reviewer. What they really do in a sense is advertising
