You can go nonstick if you don't like cooking very much and just want to get it out of the way. Easy to clean, almost impossible to get food stuck to, but absolutely boring to cook with and so easy to damage you can't even use metal utensils on them(still you shouldn't ever use metal cooking utensils on anything other than a grill). Stainless steel is great, especially for beginners. No need to season, high indestructible, mostly immune to rust, and can take acids no problem. Avoiding sticking is easy, just not intuitive. Use plenty of oil, only add oil to the pan once it's hot enough to cook on, and don't fucking touch food you've put in until it's sat there a good few minutes. It will stick at first but as the sear develops it will detach.

Why? You already got your answer. All-Clad d3 12". The anon who recommended it is rice. It will be the most versatile piece of cookware in your kitchen and unlike a lot of cookware it is actually worth the money.

If you're at all serious about cooking you would want 3:
Stainless for general purpose use, especially when you want to generate a fond for later deglazing. Update International brand if you want to go cheap, something like All-Clad or Demeyere Proline if you have money. I'd suggest the Demeyere, it's a full 1.5 mm thicker than all-clad.

Either cast iron or carbon steel for high-heat use, searing, stir-fries, and things that go in the oven (baking). DeBuyer Mineral B is standard for carbon steel, Lodge is fine for cast iron.

Teflon coated nonstick for delicate foods which stick easily like fish and eggs. Get a restaurant store brand like Tramontina or Alegacy/Eagleware. These will last for several years of home use and are much thicker than the T-fal crap you buy at walmart for more even heating.

Ideally you'd use a thin wok on a dedicated wok burner, or some other really really powerful hob. But since most people don't have that at home, storing up a ton of heat by pre-heating a very heavy iron pan is the next best thing.

I agree it would be nice if you could toss with it but fact is the heat is far more important than ease of tossing. Far better to make it harder to toss but have proper wok hei than give up the wok hei to make the dish easier to toss.
