I made my favorite from my moms recipes. Her spicy soup. It takes a whole chicken, 1 can tomato sauce, 3 cans rotels (chopped tomatoes and green chilies), two onions chopped, and 6 large potatoes peeled and chopped. I simmer it the chicken on medium low heat for a few hours until its falling off the bone, remove it, skim the broth of the fat and then add the rest to boil while I pick the meat off the bones to throw in. Then I add a generous amount of tony chacheres, and a sprinkle of pepper. Feel free to give it a try if you like. It also goes well with cornbread.

I don't see any difference between fried rice made in this country and the ones made in Taiwan, Hong Kong or China. Also when you say kow pad it just means regular friend rice. There are many varieties of fried rice in Thailand. For instance what is in the picture looks like something we call kow pad kee mao, tbqh it looks like a fucking abomination. You will never catch a Thai put fucking Amerifat broccoli or podded peas in our fried rice.

I admittedly don’t speak Thai so I don’t know the exact words for what this is. The little old Thai lady that runs a local restaurant taught me how to make it. I spent so much time there I became friends with the staff and they allowed me into their kitchen when I showed interest in learning their cooking. They call this Kow Pad Prik although the pea pods and green onion are my own additions. It definitly has a different flavor than other nationality’s versions of fried rice.

Interesting. I’m not sure how authentic the Thai food we get here in the states is. I definitely feel like the food gets tweaked to be more accommodating to the American palate. Less tomato for sure and i’m not sure how spicy true Thai food is. Here they always ask if we want it mild, medium or hot. Medium makes my nose run and i’m decently resilient to spice.

It's not authentic at all... If you actually come to Thailand you would see how different Thai food are from "Thai food." Eating Thai food in 99% of Thai Restaurants in the US/UK is like eating Taco Bell and thinking that shit is authentic Mexican food.

Well shit I get that. I lived with some Indian friends for a couple years and once a year their mom would fly in and stay for a month and she would cook Indian food constantly and I couldn’t even bring myself to choke down 90% of her cooking. My brain just couldn’t adapt to the combination of flavors.

Mostly the store bought meats that are wrapped in plastic. They tend to give off a moldy taste, like when you accidentally bit into a capsule of Amoxicillin. I am pretty sure I would get better results from a butcher if I can find one. However it seems your big chain stores ended up putting most of them out of business. One unique thing about Thailand, small mom-n-pop places seems to co-exist just fine with large chain supermarkets.

There are still butchers around but they are usually limited to larger metropolitan areas where there’s enough people to support their business. Detroit has something we call the eastern market which has many vendors for different product like meat, vegetables as well as cooked foods for sale. Luckily I live only 15 minutes from there so I go pretty often.

That's good to know. I've been to the United States like twice now and one thing I've noticed there that I don't see in other countries. Food there is manufactured like cheap chink shit electronics from China. Designed solely to maximize profits, while at the same time small markets and butchers gets run out of town not by these big businesses but by the locals who want to skimp on 1-2 dollars. I am honestly curious on what type of life expectancy you guys have eating food that is designed to be the cheapest to produce while at the same time can last the longest without spoiling.
