What are your favorite authentic Chinese dishes, and what is your favorite regional style of cooking?

My favorite that I had so far is spicy lamb cumin noodles in soup (X'ian style)

Pig ears in chile sauce is pretty good. It's weird the first time given both the name of it and the texture. It's really good though. Luckily I have a place with a "traditional menu" that delivers.

Extra pancakes are really necessary, no place ever gives enough pancakes. I've found that a medium sized tortilla works just as well, sometimes better.

They really work well, I fold up the end then sauce doesn't run out, plus I can a stack of those from pretty much any store for like a dollar and the chinks will try to charge you a ton of money for extra pancakes.
I learned that by improvisation.
