I bought a cheap combined pack of meat which was pretty good but it came with a pack of kidneys and the only thing I've eaten kidneys in is a pie. Only recipes I see on youtube are some Arab looking stews that look yuck

If you get them untrimmed so the fat is still on, they're way nicer. The fat goes golden and crisp when barbecued. It's delicious. Without the fat they're kinda boring.

Kidney fat is called suet and is quite valuable (used in specialty pastries). So usually the kidneys are trimmed and the fat is sold separately.

lamb kidneys are delicious, especially fresh from a happy animal
you wanna cut out the white middles, and marinade the halves in Worcestershire sauce, tomato paste, black pepper, and olive oil (you might use lard, or the rendered fat from the suet)
after a day or so, sear these hard, then introduce some butter and the marinade, cook till they've firmed up somewhat (use a needle to check temp)
eat with a grilled tomato and glass of ale

Make kidneys with mustard sauce

>1kg of kidneys
>salt and pepper
>1 small onion
>1dl of beef stock
>1dl of cream
>2tsp of dijon mustard
>1tbsb of cognac
>butter for frying
>parsley for ganish
Boil the kidneys for a short time, then remove from pot and remove the fat and cut into slices. Season with salt and pepper. Dice the onion. Fry the onion and the kidneys until done and take off the pan. Add the rest of the ingredients to the pan and boil it down. Pour over the meat and garnish with parsley. Serve with mashed potatoes and steamed vegetables.
