The best is the one I make. But that's really more for taquizas and general food. I do an overpriced hot sauce of the month club, so most of my sauces are new to me, or in varied rotation. That said, Yucateco red, green, XXX, and Caribbean get heavy play, as does pic related.

It's like sambal oelek in texture, almost a relish as much as a sauce. Fruity from the scotch bonnets, which are the first ingredient, but they're aged and pickled which mellows the heat out a bit. It's still pretty darn hot, while having a lot of pepper flavor.

My favorite is pic related which is made by a local here.
The best ones are original, garlic and pineapple.
It's not terribly hot, maybe Tobasco-tier, but very tasty.
I have a bunch more I use regularly though, Marie Sharp's Gold, Valentina Black, Yucateco Mayan.
Yucateco Black tastes weird to me, I don't understand it. What am I supposed to do with it?
Also I just got Mamoun's and I haven't tried it yet and don't know what it's like so if you have suggestions I'm all ears.

Made my first fermented hot sauce last weekend. I've become obsessed with it and it's half gone already, which means that it tastes awesome but it's not hot enough. For the next batch I probably need to add something like xanthan gum to keep the liquids and solids from separating. It would be awesome if I could find some carolina reapers to make it hot enough instead of habaneros, I am considering growing my own reapers, which is a whole other rabbit hole to go down.

I make my own hot oil. Pretty easy to do, just uses about a cup of pepper flakes, a couple tablespoons of Sichuan peppercorns, a couple star anise pods, a bunch of garlic, some bay leaves, a stick of cinnamon, and any other seasonings you want in it. There's a few ways to do it, but since I filter mine anyways I just mix it all up in a large heatproof bowl, warm up a cup and a half of peanut oil until crosses smoking hot for a second or two, then it off heat a minute or so, then pour it over, stirring. Then let it sit overnight and strain out.

I have about a kilo bag of it waiting for me on my mom's freezer in Mexico. Unfortunately, it's hard to grow peppers here. I am actually thinking of making one of those bucket thingies that the junkies use to plant weed to grow chillies around here. Is that why it's like that. I've had "The last DAB" before and it's hot but doesn't seem that insane. I've bitten into raw chilies that fucked me up more. I'm not wild about the flavor but it has one. Da Bomb just appears to taste like battery acid and I didn't know why that was but I'm certain they only keep it because it sucks to eat. A dubious honor for whoever makes it.

aardvark does suck but not because of the sugar, and ingredient lists are in order of use, there's so little used that it doesn't need to be put on the actual breakdown sheet

thinking a bit of sugar or honey doesn't go with a sauce with tomatoes and carrots shows you have zero understanding of how ingredients work together, it even rounds out the vinegar to be smoother and overpower the other ingredients less
