So I was thinking of making the "strawberry eclair" type popsicle but maybe with a small heart-shape mold for a small child's 3rd birthday party cake.

The party is in early march so maybe too early for strawberry ice cream filling?

I couldn't find any recipes that made the vanilla cake (or strawberry cake?) from scratch.

Maybe I could use strawberry mousse at the center instead of ice cream? So basically it would be mousse on the inside, then strawberry cake, then vanilla frosting, then toasted cake bits, toasted coconut, and freeze dried strawberries on the outside.

What do you think of this idea?
