Loaf. Was thinking about making a nice loaf of meat for dinner tonight. Any tips or suggestions on making a fine mass of protein? I'm cooking for my friends small family and they're not to fond of spices. I was going to make mashed potatoes and sauted carrots for the sides. Sounds good enough, right?

I've never heard of this and I'm not sure if I'm willing to try this method tonight. I feel like you wouldn't taste the potatoes or carrots if they're shredded and added to the loaf. Seems like a good filler though.

To be honest I haven't been able to taste a significant difference in a loaf with or without oats or breadcrumbs.
The difference in in texture. Meatloaf with rolled oats is soft and fluffy. There's also a different in how it hits your stomach. Without oats the meatloaf hits heavy and feels hard to digest. With oats it doesn't land in your stomach like a brick and it doesn't feel as hard to digest.

This is the better homes recipe my mom used. She substituted oats probably because she never had breadcrumbs.
For milk she used evaporated milk m and often used tomato paste mixed with water rather than tomato sauce.

I'll add the oats this time. It might even be a good idea to toast them in a pan to bring out the nuttiness and finish with a dollop of butter.
Would she add the evap. milk to the oats and let them soak?
Was the sauce incorporated into the loaf or spread on top?

Does anyone add egg to the mixture like you would with a meatball recipe?

Yep. Soaked the oats in canned milk.
Mixed beaten eggs into the mix
Packed it all unto a Pyrex
Spread the tomato over the too like icing on a meat cake

A few times she went 50/50 ground beef and ground turkey and it was great too.
