I've made venison semi-dry pepperoni and summer sausage where I fermented for 24 hours with a lacto bacillus starter that were excellent but I don't have the equipment to do a true dry cured salami. You'd need a humidity/temperature controlled curing chamber for that.

It is a shame, but that's life in flyoverville. I'm working on getting an old refrigerator and rigging it with a digital thermostat and humidifier/humidistat so I can start duplicating some of the classic salami. Sure they won't be the same, but better than nothing.
