they're pretty nice raw when you mix them into a nice salad, slaw, or just good topping for making wraps instead of lettuce. i dont much prefer them cooked though since they turn into a gallon of water. about the only hot thing i will put them in is a bowl of pho when you get them on the side with the basil, lime, peppers, and stuff.
