That's why you put a bunch of salt and make a sauce for it.

Chinese have the right idea. If you have a really nice fresh fish, steam it
On a plate in a bamboo steamer over a pot of water.
then infuse some ginger in oil, and pour it over with some cilantro and lemon

If you've got a slightly old or shittier fish, flour it and fry it in a wok and make a sauce with chilli

I don't know what your next step would be but if it's baking then you dun fucked up

I used to do that too. It's not bad. But steamed chinese style is better. I highly recommend you try it out, especially if you're lucky enough to have really fresh fish you catch yourself.

Like most meat, it tastes like nearly nothing at all, save for what you flavor it with. I've tasted it unflavored and unseasoned, doesn't taste like much of anything and surely doesn't taste "bad". As with most meat, its purely a texture appeal. For the texture of fish, I prefer to flavor it with salt and lemon. Without the flavoring, its as bland and boring as all other meat.

I know it's tacky, but snapper is *excellent* when you just blast it with cajun seasoning. It's even better if you make your own spice mix.

Meat has very little flavor. Often, none at all. Fruits and vegetables have very strong and distinct flavors, and don't require salt to define them. Why does this bother you? Go on then, steam some chicken or beef. Taste it. Then steam some bell pepper or onion. This is a small example, but meat tastes like literally nothing. Put some oil in a pan and saute some chicken without any additional flavoring. Try it. Tastes like nothing at all. Do the same for onion. Compare. Meat is bland as fuck and you can't shitpost your way out of it. The entire appeal is texture, and you flavor that texture with additives.

I put sage, rosemary, and parsley. Lemon, salt, and a good dose of black pepper.
I only used those herbs because I wanted to use them up. Its only tilapia, cost me lime 2 dollars. I got 2 more frozen to try out. I'll make another thread about that guy as well.
