It was packaging, not additives. It's the same idea as canned food. You seal the food into a package and then sterilize it with heat. Then as long as the package is not punctured it will not spoil for decades. Only difference is that MRE foods are sealed in retort pouches instead of metal cans.

You can buy tuna in those same kind of pouches today. They work just like cans do.

The MRE's that are served today aren't all that bad though. I always ate them cold until I was finished with training and actually had the time to experiment with what's in the rations. Then again I got out because my kidneys got fucked up so who knows. Maybe they actually aren't meant for human consumption but they tasted alright and I didn't have to shut for a few days when I ate them so they did do their job.
