In winter I grow garlic bulbs on the window sill. They are just a bulb in a bit of soil I keep watered. They grow long tops pretty quickly. I only do this in order to have fresh garlic tops through the winter. 5-10 of these are needed through the winter with 3-4 going at once.

Ingredients
3/4 cup wild garlic, cleaned, green stalk snipped, outer layer peeled, and root removed
2 cups fennel bulb, diced
2 cups red skinned potatoes, cut into small chunks
8 cups vegetable stock
2 tablespoons + 1/4 cup olive oil
1 pinch cardamom
1 pinch cinnamon
1 pinch cayenne
2 tablespoons sherry
2 tablespoons fresh chervil or thyme
Salt and pepper
1.Blanch the garlic for 3 minutes then drain and run under cold water and set aside.
2.Heat 2 tablespoons olive oil in the same pot and sweat the fennel and garlic until browned, soft and translucent. Sprinkle with salt along the way to help release the juices.
3.Add the potatoes and vegetable stock and simmer covered for about 1 hour, until potatoes are fork tender.
4.Transfer all contents of the pot to a blender and puree on high for 2-3 minutes. In the last 30 seconds, pour the 1/4 cup olive oil in a thin steady stream.
Pour the contents of the blender through a fine mesh strainer back into the pot, leaving the heat off. This will remove the woody fibers from the garlic.
5.Mix in the cardamom, cinnamon, cayenne, and sherry. Add salt and pepper to taste. This soup is good served at room temperature or chilled
