Visited my cousin in Portland, OR once and wow the selection and amount of food carts is crazy. I've been to most major US cities and can say that Portland ranks very high up there. The politics of the place leaves much to be desired but the food is as top notch as you'll find in the US.

There are burgeoning Asian food scenes in metro Houston and especially DFW. Quite a bit of stuff in Austin and San Antonio too. Texas has pretty much the largest immigrant communities outside the northeast and California and most are fairly well-entrenched and growing. I expect Dallas to start competing with LA and New York within the next ten or twenty years. I'll probably have moved out of state to somewhere cheaper and less crowded by then though.
