Goat cheese is relatively pungent and works well with other strong flavors like beef, lamb, and tomatoes as well as other strong flavored green vegetables like asparagus and hearty greens. Use some kind of acid to cut through its overt fatiness.

I like making caprese salads with goat cheese instead of mozz, basil, and whatever vinaigrette I have around.
