hi /ck/,
I'm going to a thanksgiving potluck where a couple of vegans will be present, and I was wondering if anyone has any good ideas for a vegan main course/centerpiece I could bring. before this turns into a vegan hate thread, I should clarify that I myself think animals are delicious and have no moral standing, I just occasionally enjoy the challenge of trying to make vegan food that doesn't suck. last year I made this, which I thought was really tasty:

I didn't even bother to look at the recipe but learn to make seitan out of Vital Wheat Gluten. It's extremely versatile to make mock meats and such.

Same with Mediterranean, the vegan dishes there are meant for the Lent and are thus very humble, a greek or italian family would probably roast a lamb or a pig for a celebration

How vegan are they? Do you have to scrutinize every ingredient, or use only that which you know was raised without the use of any sort of animal products (even fertilizer - yes, I have known some vegans like that), or can you just assume that soy sauce, wine, and generally all meat, honey, and dairy free products are good to go? How about a platter instead of a single dish? Spiffy homemade hummus is a pleaser. You can throw in some greens while it's in the blender and use wine instead of water for extra flavor.

As a side pickled vegetables and flatbread.

Or, if they are especially picky, fried eggplant sticks / chunks. You can add whatever flavor you want to that and it can be arranged into whatever shape you want, for showmanship!

I looked up that experiment, and it smells like bullshit. The mushroom formation didn't really look like the subway system at all except in the sense that all the dots were connected to other dots, which they would have to be in order for the fungus to consume the food located there.
