Hi cu/ck/olds

Just got my first cast iron pan. How do I ensure it blossoms and prospers? What special treatment do I need to apply to it before my first use? etc etc

Please tell me, because I paid like $50 for this thing. It's heavy as fuck.

A.) You shouldn't have paid more than $20
B.) They come pre seasoned from the factory
C.) Doing something as simple as frying a couple of batches of fries is enough to supplement that original seasoning if you're concerned
D.) Continued care is as easy as wiping it out with a paper towel while it's warm. Stuck on carbon can be removed by scraping with a metal spatula. Do not coddle cast iron. Its the bottom bitch of your kitchen operation. She's there to put up with your bullshit when no one else will.

But if its one thing I've learned since coming to /ck/ its virtually impossible to get people to part with mythology and bullshit surrounding simple tools and techniques and this is true of nearly every subject here. Pre-applied seasoning is there only to keep their product from rusting before it sells.

The kind of seasoning you want on cast iron fulfills both of the needs that a cook requires. Non-stick and non-rust.

If you use a preseasoned cast iron skillet then you're a fuckin pleb.

>> No.11464650

It takes time! Don't start off with cooking scrambled eggs. Slowly season it with easy shit like toast, or meats. Don't cook tomatoes or other acidic things directly on it. Avoiding having to scrape it at all costs when cleaning. Do not use soap. The more time it has to get seasoned, the more non stick it becomes. It won't be nonstick over night, even if you bake oil into it. And if you fuck up and do have to scrub it, don't fret. Just learn from your mistake and keep at it.

If it is a Lodge pan, and I am guessing it is, the first thing you will want to do is get an orbital sander and some 60 grit sandpaper and sand the shit out of it for about 10-15 mins. That will get rid of that shitty soy seasoning and smooth out the pan a bit. Don't worry about getting it entirely smooth.
Then rinse all of the debris out of it and dry it out completely.
1) Pre-heat the oven to 400 and heat the pan on the stove top and get her good and get her good and hot.

2) Apply approx 1 Tbsp of either flaxseed, olive oil, or good old fashioned lard and coat the interiot of the pan making sure to remove any excess.

3) Place in the oven upside down for 40 mins, then turn off the oven and let the pan cool completely.

Repeat steps 1-3 two more times.
Your pan is now seasoned.

I got a non-lodge brand cast iron skillet a couple months ago. Total cast iron noob too. I did a light coat of avocado oil and put it in the oven at 450 for like an hour or so, none of that orbital sander fuck shit, it's a god damn pan. I've cooked eggs, steak, pork chop, chicken, bacon, and sauteed vegetables in it. Of course I use butter or a little oil each time. When you're done, I either give it a quick wipe with a paper towel and leave it on the stove top or I wash it out quick with some dish soap and water, dry it out on the stove top burner and give it another quick wipe with some avocado oil, or I just leave it on the stove top as is like a used dirty whore. Seems to work fine so far.

OP here. I have absolutely no clue what to do lol.

I just smeared some olive oil over it and that'll hopefully do. It had instructions that said I should rinse it in hot water first but I figured that was just to get packaging residue off of it... I don't know.

Anyway, I'm a learning by doing kind of guy. If I ruin this one, I'll buy another (cheaper) one.

Yea, I posted a bunch of instructions earlier and honestly I just learned by trial and error. It's a fun process honestly. People say they're hard but they're one of the most forgiving cooking tools out there to me. Worst comes to worst, you just have to scrape it with something metal lol

>> No.11465593

Because you're not cooking. You're creating a chemical reaction that aligns and binds the lipid molecules of the oil into a polar surface layer.
It's just called "seasoning" because that's what cooks called it and cooking terms is what they're familiar with. The technical term is polymerization. Like how you make plastic from oil.

>> No.11465622

>>11465593
Anon I'm not going to pretend any of that, but my point is that low smoke points mean you can't heat your pan/oil to the temp you need to sear food and quickly sauté veggies

>> No.11465662

>>11465593
this is true, but I think for your average joe it just gets seasoned much much slower because they do it casually while cooking over time. Although I agree that your way of doing it is much more ideal and efficient, it will eventually get seasoned over years and years through cooking. I think a lot of people on this board buy a cast iron pan, go for the more causal method but then expect instant results like from your method.
