I used to be extremely sensitive to spice, to the point where mildly spicy stuff would make my eyes water, it'd make my nose run, and I'd cough uncontrollably. I decided at some point to stop being a bitch so I started just eating the spiciest stuff possible, putting it in my mouth, letting it sit, and not drinking water until I've finished eating. I found out that this wasn't dangerous to do, and that spicy food couldn't damage your mouth, so I did this for a while.

After about a week I already became acclimated to most spicy stuff, I don't cough at all anymore, my eyes don't water, but my nose still runs. I just use this opportunity to blow my nose, my sinuses have never been so clear in my life. Now I eat spicy food daily, after you get used to the spice itself, you can distinguish the flavors underneath it. But if your mouth is still sensitive to spice then that's all you taste and it's just impossible to identify other flavors.

honestly kind of an interesting phenomenon to me too.

at first when people try spicy food, they almost universally experience a sensation similar to pain, right? but, many who do try it come to actually enjoy it.

Is it the thrill of feeling pain, but knowing that you're not actually suffering any harm, that draws people? is it the warmth of the "heat" that you feel in your mouth due to the reaction of the capsaicin with your tongue? for me, I can tell you it's the latter.

Those are the only two reasons i can think of, however I'm sure the answer is different for almost everybody reading this. I'd like to read what other anons have to say about the matter; if you do, why do you like to eat spicy food?

I like a nice spicy flavorful food, not straight up burn but lately anything too spicy makes me sweat like crazy even when it isn't bothering my mouth much if at all. Not sure if its heart burn or some gastral issue but it sure ruins the enjoyment.

spicy food is a very cheap and relatively safe cheap thrill. you trick your body into releasing endorphins and afterwards you can just drink some cold milk or 10% sugar solution at room temperature to wash away the lingering effects.

delicious spicy food:
mexican, indian, derivatives of both, some korean.
unpleasant spicy food:
thai, coconut, some korean.

indian food would be pretty rancid without the hot spiciness, because cumin is a pretty darn sad taste on its own (obviously its not alone but its pretty dominant), and mexican food would be too plain, because the typical mince meats used are just abysmal unless you're going fancy and making chilli from chuck steak or something.
sometimes i do wish i could have the taste of a well-made vindaloo with fresh ingredients and balanced spices but without the sweat and tears of finishing it though. i don't eat hot spice because i have something to prove, i eat it because i want something different, and something that'll blow me out of whatever boring food i was eating before.
