Just grate/ microplane it and fry it with your other aromatics/add to curry pastes in basically any dish, it especially balances well against ginger.
Fresh turmeric is a totally innocuous flavour and it goes well in almost everything, it goes well in almost all curries.

Peel it by scrapping the skin with a pairing knife like ginger trying to take off as little as possible.

Watch out for stains.

And always use black pepper with it as that makes it more bioavailable.

Another nice thing to do is just make it with rice

>fry your microplaned/grated/minced turmeric in some butter/ghee in a small pot with a lid
>add rice
>mix with turmeric butter
>add 3 cups water or stock
>add star anise and cardomom if you want to be really fancy
>bring to boil
>reduce to lowest heat, with lid on, and simmer for 13 mins
>take off heat, put a towel over it, and leave it for another 13 mins.
