i cannot imagine how something simple like that can taste horrible, if it's too much mayo, then it tastes like mayo, don't you like mayo? you aren't supposed to put anything else in it than cooked potato, onion, sour cream, mayo, vinegar, salt and pepper, it literally can't taste bad unless potato is undercooked, it's too salty or too sour from the vinegar
