I planted sage in my garden for the first time this year. For some reason I planted quite a lot of it, I don't know why. I'm now left with like 8 bunches of fresh sage. What can I use it in before it goes bad?

It won’t go bad if you dry it, which is really easy to do. You can just hang the bunches up anywhere it’s not too humid and there’s decent air flow. You could also use a dehydrator or a really low oven (like 170 F) to dry it. And it’s a good thing sage is super easy to dry, because it’s so strong that you’d be mad to try to use it all up in a hurry.

Sage is great for adding depth to cream and cheese dishes. I like it in scalloped potatoes.

The thing is, I almost never use sage. I didn't mean to plant this much, but more grew than I expected. I figured I'd plant a bit and maybe figure out something to use it in but never did. If I dry it, I feel like I will never use it either haha.

Something, something, different variations of saltimbocca. You could also stuff chicken breasts with cheese (emmentaler or something), ham, rucola, cherry tomatos and your sage. A sauce on white wine basis (dry Riesling works good) goes well with it. Or like the other faggots said dry it.
