Do you poach? I never tried, because to lazy/inexperienced. Is it really worth it, after all?

>> No.11368037

I've only done it a handful of times because I'm pretty lazy, but yes, it's worth it. Not too difficult either.

Just use saran wrap. Much easier and faster poach everyone's at once if you're making breakfast for multiple people.

>> No.11368193

Every time I try it it falls apart, probably because I used old eggs.

Nope. Steaming is 1000 times better, less of a pain in the ass, and doesn't waste any of the egg. Plus, you can use cups / ramekins to create a nice uniform shape.

Don't poach. Steam.

Meh, I prefer hard-boiled or over-easy if I want that runny yummy.

If keeps the pH of the water neutral because egg whites are alkaline the neutral pH is better for cooking

Worth it. Especially if you combine with some wilted spinach and ground pepper. Easier than scrambling.

>> No.11370168

probably not, really
egg expiration dates are totally fucked up. they're already super old by the time they get to the store. up to a month old. my neighbor is a farmer with several chickens and let me in on this intel. and i've tested it with his old eggs using the sink/float technique and we're talking extremely old eggs

to OP, no, not worth it. eggs are for scrambling or frying or an omelete that you fire and forget while you take your morning dump and drag your kid out of bed or whatever you need to do. high-effort eggs are silly to me

Boil water in a frying pan.
Swirl the water with a spoon and add a small dollop of white vinegar.
Once boiling, swirl water again so that when you crack an egg into it, the whites will swirl around the yolk instead of scattering around in the pan.
Boil for 4 minutes. Scoop out with slotted spoon and place on top of english muffin. (Bonus points for adding cooked spinach and buttering the muffin in advance.)
Voila. Eggs Florentine.

Bon Appetit tested that and they found that in order to make a measurable difference you need to do a ton of vinegar. They suggest just cracking the egg into a strainer first so any loose white slips off. Aside from that >>11368053 as it down.

they're just boiled eggs except faster and easier to peel. that's right - they are MORE CONVENIENT than boiled eggs. you faggots need to stop being plebs and just develop a fucking skill for once.

get fresh eggs
boil water
crack egg very close to water or slip in using a plate or ramekin (you can do like 4 at once this way)
allow water to recover boil so the eggs are suspended above the bottom of the pan
turn off boil and get you plates ready
gently lift out with spoon and test for doneness by prodding yolk
profit

egg age does make a huge difference.

>high-effort eggs
you're a fucking pleb. the only easier egg is a fried one.

It's one of those techniques that make total sense in a professional setup like when you have to cook 100 eggs for breakfast in a hotel. Poaching just a few.. I tried it a few times just because I wanted to get it right but didn't do it ever since heh. Soft cooked eggs, cooled and carefully peeled is pretty much the same and I don't have to clean the egg white that's sticking to the side of the pot.

Did it. Probably not worth it, tastes the same as a boiled egg, just more pretentious.

No I dont poach, but I know it's a big problem in the country that my wife's son is from. His father was a poacher, and was killed by a hippopotamus when he was walking a game path at night on the hunt for some rhino. My wife still travels to africa a few times a year because she really enjoys the hospitality, and the people. I've only gone with her once, and won't go again because I was required to sleep outside whereas she got offered a bed to sleep in. It was freezing cold at night, but apparently the men that she slept in the same bed with shared body heat to keep her warm, which I am extremely thankful for
