Morrisons ghost chilli is actually bretty good and I'd rate it above tabasco. My current favourite for a clean burn is Cajohn's Classic Carolina Reaper. There are hotter sauces but they use extracts which gives a somewhat pungent aroma (Dave's ghost chili would be a good example).

Either way, I've had a bunch of them because I got the box as a gift. Los Calientes is the only one I've purchased more than once out of the 5 I've tried. It's amazing on tacos, burritos, mexican food in general. Last Dab is good but it's way too hot for me. I've also had the Ancho and Morita one from Humble House, that one is like a mildly spicy barbecue sauce, I use it for ribs a lot, that one is also great and I'll probably buy another one of that when it runs out.
The Hot Ones Fiery Chipotle sauce was also delicious but sadly has been discontinued. Was not a huge fan of the Karma sauce, and (((secret aardvark))) is just a less tasty version of los calientes.

Original fermenting guy finally posting here. I don’t know why you wouldn’t, but the vinegar, acid, and capsaicin will kill most things. If you don’t add vinegar and just blend the brine then it will easily mold on top. I just dunk mine in boiling water for a minute. Also below is my very own recipe (blue ribbon at state fair and people pay me for it regularly so it’s not bad)

25 Fresno (red jalapeños)
8 habaneros
2 red bell peppers
1 cut mango
1 bulb garlic
1 tsp each mustard seed, cumin seed
4 cloves, 1 anise pod crushed
1 large white onion
2/3 of a ginger root crushed
Seed the peppers. Roast 2/3 of the vegetables and let cool down. Rough dice everything in food process, add together to a fermenting crock. Stir daily and cover top with new piece of plastic wrap every day. Let ferment for 10 days. Blend together and add distilled white vinegar until it’s 30% of the total volume. Salt by volume ~2%

You can use dried rehydrated peppers, but be conservative with smoked peppers such as chipotle and anchos as they can overwhelm a sauce very easily. Naturally fermenting will take some of the heat out of the peppers also. I made a bhut jolokia/red bell pepper sauce and it wasn’t nearly as hot as I was hoping it would be. It’s tasty though
