Cooked rice for the first time in my life the other day, it was jasmine rice and with a bit of salt and soy sauce it tasted delicious.
It was also cheap, the packet was under 2e for a kg of rice, so i'd like to expand on this experience and make rice a proper part of my diet, what can i add to rice to make it a proper meal while still maintaining the ease of cookability? Some sort of meat? Vegetables?

Rice is great because you can cook other stuff while it is cooking. I've been using 10 minute soak, 15 minutes cook, 15 minutes rest time so that gives me 40 minutes to cook everything else.

Some ideas:

Asian green vegetables (e.g. bok choi). I fry them in a small amount of hot oil, hot enough for a sizzle sound, then add a small amount of water and continue cooking on a lower temperature. This method removes the bitterness through the high heat phase while not overcooking them. Pic is this plus unagi over rice.

Asian style omelette. Like Western omelette but with more oil and higher temperature. You are going for more caramelization of the egg so it has a stronger taste to go with the bland rice.

Roast chicken leg. I haven't done this yet but roasting with some kind of soy sauce based marinade would be good with rice.

I also make a lot of nigiri sushi, which is also fast since you prepare the fish while the rice is cooking and then it's about 10 minutes to make the nigiri. But it takes extra time to let the rice cool.

These are the Asian style dishes I like. I also have rice based dishes like rice and beans but they are very different and more involved to make.

What benefit does soaking bring? I've been just boiling the water, adding rice, and waiting on low medium heat until all of the water is gone.
Also, am i supposed to do some fancy stuff like washing the rice or whatever? The way i do it it tastes just fine and is fast and easy.

In Australia you can get 10kg for like 10 bucks, easiest way to cook it is chuck a cup of rice with 2.5 cups of boiling water in the microwave for 12 minutes, stir halfway through. Perfect fluffy rice each time.

That sounds really convenient, you could even make it in the same bowl you eat it out of, less dishes.
Surely there's some downside, everyone just cooks their rice in a pot on the stove.

I'm mostly just following other people's advice. But I think that the soaking and steaming (without heat) both improve the texture, making the rice lighter and less soggy. As for washing, it should also improve texture since you are washing away powdered rice which would make the rice stickier.
