I basically infused some already decent enough Chicken Broth with a lot more flavor. If I had a lot more time I would have roasted the carcass and some wings and let it simmer for hours to get a real good batch.

I oven roasted the Legs, thighs, and wings. I seasoned it and cooked it in the oven with foil over it before shredding it and refrigerating. As for the breast, they were deboned for later.

2 sticks celery
2 cloves of garlic
1 whole onion
2 Carrots, chopped
1/4 cup Flour
Broth
1 can cream of chicken
1/2 cup heavy whipping cream
3 tblsp Butter
1 tblsp Olive Oil
Chopped Thyme
Oregano
Salt and pepper to taste

Season the boneless chicken breasts and put a little oil in the dutch oven. I chop them into cubes so they'll be cooked through pretty well, because I mostly want a quick sear, but I also don't trust the rest of the process to fully cook them. So I sear them in the oil and take them out. Then I add a little more oil and cook the onions, carrots, and celery for about three to four minutes before adding the butter. Cook it in the butter for a few minutes and add the chicken back along with the pulled chicken and let it all cook together for a couple more minutes. add the flor and let it get all combined and then add the can of Cream of Chicken. (you could use only half of this if the broth is good enough) Next add the broth until covered and put it on medium.

After putting it on medium I add the chopped thyme and a bayleaf.

Dumplings
2 Eggs
1 cup Buttermilk
2 1/2 cupsFlour
1/2 Teaspoon salt
1 tablespoon Baking Powder
Fresh chopped parsley

Mix the dry stff and then add the eggs and buttermilk, not overmixing. I mix it with my hands. Make little balls of it and add them on top of the soup. Sprinkle chopped parsley or chives on top Let it get to boiling and let it go for 15 minutes. I flip them after 10 minutes and then I sprinkle more of the chopped parsley, but you know they're ready just by touch and it's good to serve.

I had a fuck ton of dumplings, but there's a lot of broth in this. I was actually afraid there was too much, but it turned out great. The dumplings just really cover them well.

There's a balance. You have to season your shit, but what you like isn't necessarily how you need to season it. When I cook, I usually add a little more salt and a lot more pepper, but my girlfriend likes it just as it is, almost every time.
