It's not unhealthy, you need to recognize the pattern of excess conservatism in the establishment vs a contrarian backlash.

For a long time the medical establishment basically said carbs are good, fats are bad. They always knew fat in general wasn't bad, but they thought that because fats are high in calories, a low-fat diet might be a good way to reduce calories. They thought saturated fats are bad for various reasons, including a strong relation between *serum* blood cholesterol and heart disease.

Fast forward 30 years and the evidence that dietary saturated fat isn't bad isn't quite so strong. And contrarians jump onto this an make it seem like there has been a conspiracy against fats this whole time.

A reasonable conclusion is that fat is fine, the ratio of saturated to unsaturated fat is important, and saturated fat may be bad. As far as carbs are concerned, avoid highly processed carbs, but white rice is not bad. The main problem with rice, and wheat to a lesser extent, is it's low in protein and so forces you to get protein from animal sources to make up for it. What I do is eat a small amount of grains, medium amount of legumes, and medium amount of animal protein.
