So my dad is from Scotland and my mom is from England, but both their families are originally from Ireland. I want to get in touch with my roots, cook some traditional cuisine. English food is alright, Scottish food seems fucking terrible. What are the basics of Irish cuisine. Also, is there a substitute for Cumberland sausage for bangers and mash? All I can get are Italian and Polish sausage.
