Everything slightly old, unless the peasants had ready access to it. Internal organs and fatty cheap meats make up the core of italian meats, including the smoked and cured ones. Older tomatoes, semi dried for fresh eating or squishy foe cooking. Always olive oil, generally extra virgin. Also I've noticed everything cooks with a kiss of the pan, or slow cooking.

I'm just listening with interested attention to the experiences of women.
