Flour is quite healthy and keeps you slim and fit. As you can see, Americans started becoming obese as they reduced their flour intake. Despite this, Americans actually believe they have a high flour intake, even though it's at a historical low.

Whole grains flour is pretty good but it's usually made into something with a low water content compared to other starchy foods so it can be more fattening if you don't need the energy.

I bake my own bread - loafs and bagels. I eat a lot of bread every day.
But do not eat bread with fat! Starch and fat together cause diabetes/metabolic syndrome.

sourdough takes much longer to proof. I ferment my dough with natural yeast culture, but for proofing, I add active dry yeast so it takes about 1.5 hours to proof.

Flour is amazing it is one of my favorite parts about being in the kitchen.
Noodles and breads and cookies and dumplings and so on. All some of the best tasting things you can have, it's super inexpensive, I just love it.

Whole grain flour seems to be okay, more nutritious and more filling so you don't end up eating as much as you would with refined flour. It can be eaten daily in the right amounts without causing issues, but the amount varies from person to person and you need to go by what your body seems to be telling you. If you're on a good diet you can kind of tell what food you need by your body wanting more fat, carbs, or protein.
