This happens with mushrooms too. I have noticed that once they have gotten hot and start steaming and sweating all the oil comes out again and they cook just fine. Just turn the heat down a bit so they dont burn while there is no oil in the pan.

If your eggplant is hot enough, the water evaporating will keep the oil from entering it's core. Like when frying fries.
