Asian cuisine is underdeveloped compared to the entire pillar of culinary development led by the French. French techniques and understandings of the cooking process spread to most of the West(if it was always actually upheld after adoption is a matter of debate :cough: :cough:).
However Asian cuisine never got the same infusion. True quality Asian dishes are relatively rare, because only a few select foods coincidentally overlap with the fundamentals found within the French techniques, providing them with that extra edge. Those foods are good, but they're rare, and there's no concentration in any one Asian country. Asian flavors themselves can have merit, but really their kitchen methods leave tons to be desired.
For this reason, the most successful country in Asia when it comes to food is Singapore. A small country, but it seemed to have uniquely adopted the high level understanding of the cooking process from the French, but kept the authenticity of Asian flavors and ingredients. Really nothing else in all of the world is like it.
I should note how different it is than simply converting Asian foods and making them palatable to westerners, as most Asian->West food crossover that you see in the West only manages to do. It's also different from those horrible abominations that Asia sometimes produces where they attempt to emulate Western dishes but within the culture of Asian flavors. Like that shit ain't pizza anymore for the love of God stop.

So yeah. The French mastery of the kitchen combined with the deep understanding of Asian flavors and ingredients is something I've only seen in Singapore and I think it happened that way due to a rare cultural phenomenon of colonization and cross assimilation.

Singapore has an amazing blend of Malay, Indian and Chinese. Add to that the westernized component and you basically have the best of many cultures blended to create something special food wise. Except it's not fake like in America, the ingredients all come from nearby so the food is both cheap and really authentic but with a bit extra that makes it special.

But, it wasn't really an answer. If we're talking a country's own cultural food, I'd say Vietnam. I've spent almost 5 years there. To be honest, it does start to get old after a while, but they have a huge variety of dishes. Some good French pastries, excellent soups, bomb BBQ, and alcohol there is cheap. Couple of my favorites that I've never seen anywhere else is DIY BBQ Lamb breast, and Tiết canh. And when I say variety of dishes, I mean it. They eat everything. You won't hear a bird sing in the morning or evening, because it's been hunted. And, yes, I've ate a couple dogs. Bit too gamey, but nothing a little rice wine doesn't cover.

If you are talking about a country where you can order any variety of food, it would be a toss up between UAE (Dubai) and Japan (Tokyo). You can get any food you want in Dubai, and it's authentic. They import hired help from all over the world. Tons of Russians, Pinoy, Indian, Somali, Paki, Chinese, etc. So, you go to the region of the city where these people live, and you get the opportunity to go to their restaurants. It's pretty good, although not always the cleanest. But, it's authentic.
Tokyo, on the other hand, prides itself on being the 'best' at making food from other countries. Best Pizza I've ever had was at a dive bar at 4AM. Yes, it was mayo based. Shit was the bomb. Best cheese burger I've ever had was at a 'American Old Western' restaurant near Tokyo Tower (the staff was dressed up like cowboys/girls). Authentic Japanese food sucks in my opinion, but they make everyone elses food better than where it originated.

It's fucking hot. Not too bad once you get use to it, and it's a dry heat most of the time. Had an apartment there for close to five years. It's not as expensive as everyone thinks it is. Don't visit the Burj Khalifa if it's windy, you won't see shit from 'The Top'. Street shawarma is delicious. Camel tastes like the toughest, tasteless, steak you've ever had, but it's customary to butcher one during a wedding, so be polite. Best hummus I've had, and pretty good flat bread. You can only drink in hotels, as they are the only places allowed to have bars. Some of them are full of hookers. Some of the best clubs on earth. The Cavelli Club is beautiful. If you have the connections, go to the Armani Club. You have to be invited, and your ID and invitation will be checked as you enter by three different people at two different checkpoints and at the door. Inside is a wall of LEDs that create pictures that go with the music. Ramadan sucks, everything is closed. There is only one bar I know of that's open during it, and it's the oldest bar in the city. You can't order beer alone though, you must order a sandwich as well. No one eats it, because it's a shit gimmick to get around whatever their law is. The expat community is pretty cool though. Abu Dhabi was always under construction it seemed, so I didn't go up there unless there was a F1 race. Best track on the circuit, and I've been to a few of them. Beware the stinking shitskin taxi man, some of them don't bathe. If you're looking for a grocery store, you can find them in the basement of the malls. Also, they have the best malls in the world. They also have the most Rolls Royces in the world. Go by the marina, some of the boats are pretty cool. Worst Zoo in the world. I think I saw one staff member. They had one feral looking lion, and maybe two dozen animals total. The whole place would fit on a football pitch.

Past the clock tower roundabout, near the Radisson Blu, there are some authentic Chinese places. One is pretty famous, and large. Private rooms upstairs. The other good one is a Hot Pot around the corner from the Blu. Also, the Blu does free Johny Walker tastings once a month, and has a hot girl sing while a black dude plays the piano. Good cigar bar too.
Oh! Get a 'localized' pizza at pizza hut. The shwarma one is awesome.

They're very lenient with tourists, as that drives their economy. However, showing signs of affection in public, such as kissing, is looked down upon. Holding hands is fine. The social scene is very big, lots of bars and clubs.
Regarding living there; I lived in a cheap apartment at first along Somali Road. Most of the apartments were empty, with a business name on the door and a phone inside. Basically an over seas 'business' that someone is using to launder money through. I think I was one of maybe four people who actually lived there. They will let you modify the apartment as you like, such as knocking down walls or building new ones. They don't really care. The rent was like $600 a month.
I later moved to an apartment near BurJuman. The rent was a little higher, and it had actual tenants. The benefit was that it was right next to a mall, a train station, a bodega down the street that would deliver food, a full sized grocery store within walking distance, as well as a Jollibee and Pizza Hut. Rent was like $800, but the benefits of the location more than made up for it.

Personally like it much more, but I didn't ever eat black pudding while in England (kinda regret it now), but had some in Dubai. It wasn't that great. Tiết canh has a much better flavor, and the texture is 1000x better. I've read of people using different bloods, but I've always had it with either duck or chicken. It's a shallow dish, served on a plate, not in a bowl. You scoop the blood and organs out with 'rice crackers'. It's not puffed rice like at most chinese places. Closer to a rice paper wrap, but thicker.

China because it's bigger and has a lot of regional variation. Sichuan, northeastern, southeastern, western, Hunan; and each area has its own specialities, even less famous provinces like Guangxi for example with its snail noodles.

China in general has the biggest, most complex flavours. It has the widest number of dishes and ingredients. Nothing even compares, honestly. You could eat a different thing every day for years.

the vast majority of early chinese immigrants are Cantonese, from guangzhou. of course they'd be similar, its all from the same region. Also you gonna remember american chinese food is very different from china chinese food. Everything now is sweeter and coated with some sort of sauce and deep dried in usa.. if you actually went to guangzhou today you'd find most of the food there is quite light compared to rest of china
