Unfortunately, I cannot recommend this recipe. My family did not enjoy it. I didn't include the onions and garlic (my daughter finds them yucky) and halved the oil and salt to make it healthier. I didn't include the herbs, either, since my son won't eat it if he sees green specks. We just found this recipe to be quite bland and uninteresting. 3/5

I’ve got a recipe called Taco Bake that my grandchildren absolutely adore. It’s a bit much to type out here but you can send me a private message for it (I’m still figuring out this 4chan.com thing, can you do that here?) My youngest grandson claims to be “allergic to vegetables” (the little stinker) but I found a way to dice up some carrots and add a can of drained corn without him knowing (shhhh!) and instead of pastry crust I use Bisquick. Of course the most important ingredient here is love

Add orange juice, dates, egg, and butter and mix again lightly. Into a bowl, sift flour, baking soda, baking powder, sugar, and salt. Pour orange mixture over dry ingredients, and stir lightly. Fill greased muffin tins 2/3 full. Bake approx. 15

3 c. water, chicken broth or veg. broth
1 t. curry powder
1 c. coconut milk (I used light)
1 t. sugar
2 T. fresh lime or lemon juice
2 T. finely chopped cilantro leaves
salt

Cook the onion, garlic and thyme in 2 T. butter in a 4-qt. pot over medium heat until the onion turns translucent, about 10 min. Add the corn and half the water/broth, cover partially, and simmer until the kernels are soft, about 15 min.

Heat the remaining T. of butter in a small saucepan over low to medium heat. Stir in curry and heat gently for 1 min. to wake up its aroma, but be careful not to let it burn. Remove pan from heat.

Puree corn mixture, then strain through a medium mesh strainer (I skipped the straining step). Add the rest of the water/broth. Whisk in the cooked curry, coconut milk, sugar, lime or lemon lime and cilantro a minute or two before serving. Season with salt.

I'll be praying for you. I know sometimes when you are a young man that things don't seem to go your way. I used to be the same way until my mother was diagnosed with breast cancer.

I remember feeling so helpless and hopeless. It wasn't too long until one of my friends in college asked why I was feeling so bad and I remember breaking down and crying. I told her about my mom, and the most comforting thing happened. She touched my shoulder and started praying with me. I hadn't prayed in so long.

My mother started a recovery, but the biggest change that happened in me was finding out what God's plan really is in our lives. It was so comforting knowing that God is in control. After my mom died, I went back to church again and the fellowship that I received helped me get out of a deep depression. Hello fellow cheffettes!

I just got back from my son's house. Bless his heart, the poor boy had been living off cans of ravioli and publix chicken tender subs! To try and help my sunshine I taught him how to make his favorite vegetable soup. Here's what you'll need

-3 carrots (peel em up!)
-2 whole russet potatoes (peeled again, you wouldn't want that arsenic in your soup would you?)
-one half cabbage
-two cans of hunts tomato puree (I like hunts because of the low sodium)
-three stalks of celery
Now you just have to boil all the vegetables for about 30 minutes, blend them up, and add the tomatoes! Simmer for as long as you want and add water to get that perfect texture! I just love this soup. Add a bay leaf or two for that extra spicy touch :)

Luckily, I have some super easy recipes for those busy weeknights like Julie's World-Famous Taco Soup!

4 cups water
2 beef bouillon cubes
2 cloves garlic
1 onion diced
1 packet Old El Paso taco seasoning
2 lbs. hamburger
1 can Rotel (substitute w/ canned tomatoes if too spicy)
1 can black beans
1 can corn


Simply brown the ground beef and caramelize the onions and garlic for about 5 minutes. Then transfer to your Crock Pot and add the canned contents, water, and seasonings. Let cook low and slow for 8 hours and then, voila! Come home to a delicious meal that kids and hubby will practically inhale!
