My oven only goes up to 450F because it's a toaster oven. Pic related is a pretty average pizza that comes from it. I also have posted garlic fingers which is very similar to pizza, they turn out great. I have heard of a method where you prepare the pizza in the pan and then place it on high heat on the stove for a minute, but I have yet to try this technique. Just did this last one earlier today. Bison dish focusing on some of the nice ingredients of the tail end of summer- bison, carrots, plums, and mushrooms.

Did a few things with plums, one of which was this plum salt I used as my finishing salt. Literally just plums simmered with a tiny bit of water to get them started, then dissolved in as much sea salt as would go, strained the liquid really well, poured it onto a sheet, and let it dry and re-crystalize.

Damn man, looks really good. My mum used to make banana cake sometimes, good stuff.

Start of the plateup. Black carrot puree and some nice little carrots roasted down in marrow fat.

I also used marrow to make the mushroom element of the dish, a chanterelle 'conserva'. Seared the mushrooms in a dry iron skillet just to get a little color on them, then marinated them in a mix of bison stock, 30 year old sherry vinegar, herbs, fermented honey (had some left from my wolf fish dish), salt, and a tiny bit of bourbon (cooked out, of course). After they'd soaked up that flavor, I submerged them in liquid rendered marrow that I'd confited shallots in to infuse it with a really nice caramelized-onion flavor, and left them like that for a few days. To serve I just gently heated them back up in the fat, and dressed them with a mix of a little of that fat and some of the reserved marinade.

It should work, conserva method is a pretty traditional way of preserving mushrooms. Probably won't last quite as long marinated and then put into the fat as they would if you just put them in oil or whatever, although if you jar them up they should keep for a fair while. I just went through hell to make this. Malted 200 g of barley and made it into flour using a goddamn "manual" coffee grinder. 8 h of soaking, followed by 8 hours of drying, rinse and repeat until the first few millimeters of the sprouts come out, then dry on the lowest setting in the oven until they're ready to be ground. The smell itself already is some reward (it takes me back to my childhood where the town I lived in had a brewery) but I can't wait to turn it into tea or Sikhye. A friend of mine is homebrewing and I'm gonna ask him if he needs any. Think I made too much of the flour but with some food-grade silica gel, it'll last for ages.

Was really nice to eat- made strong prawn stock from the heads/shells of the prawns and mirepoix as well as some home dried tarragon and some of the corn cobs/husks, reduced it down, and then finished it with the beurre monte I poached the prawns in. Then, when you cut into the tortellini, the corn puree would run out and mix into the prawn sauce to coat the pasta and garnish. I really had a particular way I wanted the dish to turn out and it went exactly how I hoped.

Just made caramel sauce. Had to determine the degree of caramelization by taste because the butter masks some of the colour, but it turned out great nonetheless. I'll freeze it in an ice cube tray for coffee. The goes into the freezer for dessert tomorrow.

>100 g white sugar
>75 g butter
>Inside of 1 vanilla
>400 g double cream
Gently heat sugar, butter and vanilla until the sugar is dissolved. Keep heating until you can see/taste caramelization, then carefully add double cream. Bring to a light simmer and let cool, done.
If you can't get double cream (creme double), you can substitute for heavy cream and mascarpone in equal parts.
