There's literally nothing wrong with charging large amounts of money for a product. You're free to choose what you spend your money on, and he wouldn't be charging that much if that price wasn't working to everyone's benefit. If he sold at a much lower rate he'd probably get too many customers for his small shop to handle. He already needs to enforce reservations going out many months in advance to handle all the business, it would be retarded for him to try to attract even more business with lower prices. That would basically equate to him actively investing in trouble.

It's not a scam any more than any other hyped consumer experience is. There's probably at least some truth to the notion his sushi is exceptionally high quality, and it's very far from the craziest expense people indulge in to drop a couple hundred dollars on a one-time high quality meal.
