Freezer quart is certainly more than enough. The technique wastes a lot of plastic, though, so this time I used sandwich bags, intending to put them inside a larger freezer gallon bag which I'd re-use. I forgot to use the outer bag this time, though, so there's a fair amount of frost buildup - not a huge issue of course.

Bagging also proceeds way faster with two people, so you can have one person dividing and dropping the meat into bags with dirty hands, and another closing the bags and flattening the meat with clean-ish hands.

All of those things, once opened, still keep better in the fridge in my experience. I keep vinegars, oils, and a limited amount of salted butter out at all times, but most other perishables that aren't damaged by refrigeration (like bread and potatoes) I refrigerate. Decreased temperature slows down most chemical reactions, which makes things keep longer.
