also it looks like it's impossible to cut with a knife without crumbling it into pieces. you even tried to hide that on the pic. I bet it turns into debris when you try to spread butter on it.

Should be similar to OP's since that loaf hydration is @ 60% like his. He may have used a loaf pan whereas I used a preheated cast iron griddle with a cup of boiling water in the oven which could make a difference.

Crumb looks okay, but the crust is unremarkable. You want to make good bread at home. Buy Tartine or Flour Water Salt Yeast.

Both teach you how to make artisan bread at home in a dutch oven (since most home ovens don't have steamers to properly make bread)

How can I get a good crust on top? I can get a good crust on the bottom, obviously from the pan or dutch oven or whatever I might be using, but the tops don't always come out right. I've tried egg wash, water spritz, honey and oil, and so on. They all never seem to work. Egg wash probably works best, but it doesn't make a crust like I like, it makes that kind of flaky crusty crust which isn't what I'm looking for. Yaknow?

I'm more looking for that hard crust the bottom gets while keeping the inside nice and soft and all that.
