It's one of these things which is exclusive to one particular locality, and every cunt and their granny has their own 'secret' recipe.
Most folks reckon it's a combination of a particular brand of brown sauce mixed with particular brands of either malt or distilled vinegar, or possibly non-brewed condiment, and maybe a little water to get it to the correct taste and consistency.
Every chip shop owner will have their own method of prep.
It essentially tastes like a really fucking spicy vinegar, and goes excellently with most chippy foods.

It's most definitely not a BBQ style sauce, brown sauce is a fair bit sharper, and usually much less sweet.
I understand that years ago,most folks made it using a brown sauce from a company called 'Rowats', which might or might not still make it.
These days, most folks would probably recommend using 'Gold Star' brown sauce.
You can't use HP sauce, it doesn't work very well.

In the East coast, they serve salt'n'sauce, on the West coast it's salt'n'vinegar.
I believe that there might be further variations up in the Highlands / Aberdeen area. I know they have something called 'red sauce' which isn't actually tomato ketchup, but I have no idea what it actually is.
