I heard that only moonshine produces enough methanol to blind or kill, but what is the difference since both wine and shine require fermentation? Also, fruit produce more methanol than grain.

The difference is that moonshine is a product which is distilled from what they call a 'mash'.
Brandy is simply distilled wine.

If distilling just transports the chemicals, then shouldn't there be as much methanol in the mash (fermented grape water) as in the distilled product (if the first few ounces are not thrown away)?

It is not the presence of methanol, but the concentration.
It is present in wine in very small quantities, but when distilled, it will be in a far greater, and much more dangerous, percentage of the finished product.
It is not something to sorry about with wine.

It's not the methanol that causes moonshine blindness. It's the heavy metals in the old car radiators that are used in moonshine distilling sometimes. Want to know how to make sure your moonshine is safe to drink? Pour a bit into the lid of it's mason jar and light it on fire. If it burns blue you're good but if it burns any other color, dump it. That's got heavy metals in it.

I make muscadine wine every year in at size mason jars. Fill jar 1/2 way with slightly crushed muscadine, add 3/4 c sugar, top off with water and put on the lid. I make about 12 jars, store them all inside an old ice chest incase 1 or 2 decide to bust. Store at room temp for 6-8 weeks. Lightly shake every week. After time has passed Carefully remove lid, strain, enjoy. Pro tip -- wear gloves when dealing with muscadine. They will make you itch like crazy. Very irritating to the skin.

I've made it many times with the balloons on larger bottles but this works just as good and I find it easier.

Moonshine is distilled. Wine is fermented.

Get champagne yeast, and add it in your grape-water-sugar mash. I doubt you'll need to add sugar. Grapes are around 15% sugar already.

Fizziness is a byproduct of fermentation.
