I recently discovered a spice shop near where I live that has almost every single spice you can think of no matter how rare

what should I buy/look for and what dishes should I make?

Haha! No. I try a new recipe every week but my herbs and spices don't change drastically. I know what flavours i like.

Theres a bunch for italian or mexican etc. and some of those cross over to indian or spanish dishes.

I don't know what you should cook, but just to wit here are some spices I commonly can't find in grocery stores that I use:
Saffron
Summer Savory
Whole Nutmeg (sometimes see this around, but not always)

Other than that, I suggest you see what unique or odd things they have that you've never tried, and research some recipes that use them.

Anyways taragon works great with chicken, fish, white meats in general. Many people don't like it but if it isn't scandalously overpriced give it a try.

I never see juniper in american cooking so I suggest that.
Put in a wild game stew or a beef heart.

Just pick a random spice. Then look up what kind of recipes you can use it for. Learn something new every time you go shopping. If you like the taste, then experiment with it in normal dishes. If you don't, pick some other spice.

But don't make the mistake of buying a dozen new spices in huge amounts.
