i had this really good seabass salad at a thai resteraunt once where they chopped the lemons so they were like little triangles about the size of a pea, but they still had the peel attached and somehow it added to the texture of the salad rather than just being gross eating lemon peel

You want to process them into a stored form. Consider a bulk juicing project and refine it from there into other products. Definitely consider a craft project to gift to friends if you have a surplus that you can't handle when stored.

I'd get a bunch of pop top bottles and then start juicing. Once I got the lemonade recipe where I'd like I'd fill and store. Document the whole process on social media and start giving to friends, let the rest of the peeps be jealous.

I got a friend who does that with maple syrup harvesting and it's pretty effective at riling people up.
