What do you do with kale?
I have the opportunity to get it for free on a regular basis, but it's pretty disgusting raw.

de-stem it, rip or chop it into large bite-sized pieces, drizzle on some evoo and juice from half a lemon. massage for a minute or two. literally just rub the evoo and lemon juice into the kale. let it sit for like an hour in the fridge.

add thinly sliced red onions, pomegranate seeds, sliced toasted almonds or pine nuts, and mix up a dressing using evoo, lemon juice, a splash of good vinegar, tahini, and stone grown or whole grain mustard. you can add cheese (goat cheese is great, as is shaved parm), protein (shrimp, chicken, etc), or other veggies (roasted beets is really good in this, especially with goat cheese.)

also, chop it up and toss it into soups. or sauté it with some onions, garlic, fresh diced tomatoes, cooked lentils, and add s+p, lemon juice, and whatever spices you like.

Fun fact: Before liberal yuppies convinced the world that kale was "totally, like, awesome" the biggest purchaser of kale was Pizza Hut to put as inedible garnish around their salad bars.
Somewhere around 2010 it suddenly became a meme. But it was barely considered even food before that.

For a great side, brown some Italian sausage. When it's halfway cooked through, add diced onion and some garlic and cook until softened and fragrant. Then add a bunch of de-stemmed kale, a splash of water as a carrier, lots of salt and fresh pepper, cook until the kale is soft and the water has evaporated.

I too would back smoothies. Raw kale has sulforaphane which gets cucked when it gets cooked. That substance is loaded with many health benefits and has shown to increase moods and productivity by incredible amounts in mice.

Why not just say eat a variety of brassicas for health? I don't understand cherry picking a single compound from a single food source to list a couple of health benefits in mice. You probably knew there was no good research on humans and as a food group they offer dozens of health benefits that actually have been proven.

Testing humans is significantly more difficult and longer. Rats are decent things to test on. The thing about sulforaphane is you need to eat kale raw, which is why I singled it out to back the smoothies suggestion instead of cooking, plus the compound is significant, Dr Ronda Patrick did a podcast about it, something absurd like rats were 40% more productive or something, and showed increased moods, and that's just one affect.

I tried massaging it with EVOO and lemon juice and letting it marinate. It does help a lot, but the aftertaste is still really bad. So I took the marinated kale and sauteed it like >>10763495 suggested, but without the sausage (didn't have any) and with clarified butter (to replace the sausage drippings).

It came out surprisingly very palatable. Not amazing, but I wouldn't mind eating it like this as a side on a regular basis. I realized after I finished it that I had bacon in the fridge, so next time I'll try it with that and add some diced tomatoes.

Would you recommend it in any soup? I've used it before in a cream-based sausage and potato soup that came out pretty good, but it takes a while and requires several ingredients I don't normally keep on hand.

My favorite kale recipe is with golden raisins and pine nuts.
De-stem kale, chop into small pieces. Make sure you have washed it very well because it holds a lot of dirt in the curly leaves.
In saute pan, dry toast pine nuts until noticeably browned. Reserve. Add olive oil to pan and saute kale in it, turning/stirring frequently, medium-low heat. About halfway through add golden raisins into the kale. I usually use about 1/2 cup per "bunch" of kale but you can use as many or as few as you like, must be golden raisins tho, purple raisins are not the same and not as good. Keep sauteeing, raisins will plump up a little, that's good. Just about 1-2 minutes from the end add the toasted pine nuts back in and keep stirring so none of them burn. Salt, pepper, voila.

I make a decent little side out of it.

Mince up garlic, add butter to saucepan (lid will be needed) and sautee. Decore and roughly chop the kale. Add to saucepan with a small amount of water and another lump of butter. Put lid on and let wilt. Remove lid, add salt/pepper and blast it with heat to remove remaining water, or transfer to oven if you want it to crisp up.

I've also had success in adding balsamic vinegar and using that as a filling for paninis.
